The Invercargill Licensing Trust (ILT) is a high-performing community-owned organisation with a clear purpose – to create and contribute to a vibrant Invercargill. 

ILT operates 23 businesses across Invercargill. It employs around 700 staff and has a rich heritage of investing in leading-edge hospitality facilities and funding significant community projects through its distribution of profits to over 400 community organisations each year. This is a permanent full-time role with a minimum of 30 hours per week with a 7-day rotating roster as required. Chefs will be based in Invercargill, Southland in one of our establishments. 


Applicants will demonstrate the following attributes:

• A professional appearance with a positive attitude adaptability and flexibility.

• At least 3 years of previous chef experience and 

• Having formal qualifications is preferred.

• Good cooking techniques and procedures

• High expectations for consistency and quality of all food

• Supervise, train, and manage kitchen staff 

• Proven ability to create interesting menu items with a holistic approach, covering many food types to complement the various outlets.

• Ability to work well under pressure

• Community-focused with a passion for people and the community

• A true team player

•Honesty and reliability.


Task includes:

• Be familiar with daily and ongoing menus, functions, and specials.

• Ensure individual sections and responsibilities are ready to meet daily functions and special requirements.

• To ensure each component of a dish prepared is up to standard, properly cooked, and delivered on time.

• Follow recipes and instructions carefully.

• Able to show and provide guidance for recipes and instructions.

• Adhere to hygiene regulations and be familiar with and follow the food control plan.

• Conduct regular checks on ingredients, ensuring freshness and quality including freezing and preserving foods. 

• Inform the Head/Sous Chef of any stock ordering needs.

• Understand food costs and operational budgets

• Able to discuss issues with other team members

• Ensure all maintenance problems are reported to the Head or Sous Chef promptly.

• Support the Head Chef and provide cover when on leave.

• Champion, comply and promote health, safety, and well-being within ILT.

• To maintain the standard and culture of the team by setting an example for new staff members and assisting in their training when required. 


Chefs may come from a variety of different backgrounds and experience.

The pay rate for this role ranges from $26.50-$29.00 per hour depending on the skills and experiences.
